The startup mentality means underinvestment in infrastructure - IT is under-funded and (despite our best efforts) immature for a company of this size. There is also no investment in people management; generally, the manager of a team is the most senior technical person in that group and so the average span of control/team size is small. Managers are expected to know everything about everything going on in their team.
NVIDIA doesn't try to compete with the likes of Google and Facebook in the area of employee benefits and with the exception of critical engineers, doesn't attempt to get into the salary bidding war of those two in particular. However, employees are very loyal and turnover is low.
NVIDIA has a very strong and charismatic leader in Jensen Huang; he is hugely popular throughout the company. He likes to get down into the details of projects and can be quite demanding.
A big part of the company culture is social responsibility; that permeates everything from how trash is disposed of in break rooms to building products that use the least power possible to forgoing lavish company holiday parties and using that money to rebuild facilities for local schools. Having fun is a big part of the culture.
